Enter The Dragon


With one month to prepare and of it two weeks to conceptualise, a week and a half to do all the icing sugar filigree piping, cutting out of pastillage and three intense days(of absolutely no more than 1/2 hours sleep in 60 hours) to bring the cake together. It all was worth it. Here is the Gold Medal Winner Entry for Class 4: Wedding Cakes, for the MIBC Challenge 2006. (A pastry competition held here in KL). There was so much love in the club. We were mostly loved up dancing and flying to the high powered excellent music provided by DJ's David K and Princess Ann. Excellent music by excellent DJ's, I sometimes wonder why they bother bringing in international DJs if they spin music that suxx eggs.

My adult friends and I.


We had a little reunion of the KDU Class of 2001 School of H&T, Dip 3 recently. the place was 101degrees opposite Lot10. It's a lounge with a drinks list longer than their food menu but i think that's the whole point of it. Classy, attentive staff and got a nice discount from Alex's connections. I always like it being in the service industry, you can always get things at a discounted rate.

It was Allison's (Alex's Sister and the future mother of my children) 24th birthday and it just so happened that Jane (darrrrrrrling!) had come down for Chinese New Year so we called everyone for a birthday bash, Colin and I baked an oreo Cheesecake which to me seemed a bit soft mainly because it was just baked and we threw it into the freezer to set in like 2 hours. But everyone loved it.

Anyways, back to the reunion, there we were, 4 years after we left college, all working all leading different sorts of lives but we came back to chat, gossip, bitch, catch up and introduce everyone to our other halves... say it with me guys "Hi! This is my boyfriend Edmond!" Chui Munn couldn't stop introducing her boyfriend to all new comers whether she knew them or not. He is cute, no I'd say handsome. The boy is handsome with that little nerdy but that's what i like.


Yuhei was there and so was Jenn who was taking wierd and cool pictures.


MJ was there too surrounded by the beautiful girls of DIP3!

Kha Yen brought her boy Mark who was quite cute too. hmm straight guys always seem more hmmm attractive..maybe cause they're so unattainable? Not that I've tried to turn em anyways.

Joseph, my bebe, came a bit late because he had stuff to do, still I was glad he could make it so I could introduce him to my friends. Bebe, you passed the test, they all thought you are cute and a very nice guy, apparently they say he's lucky but I think I'm the lucky one.

Talks went on about the time we skipped class to go eat ice cream and smoke, pretending to not hear our lecturer Ms Anne shouting out our names through the 3rd floor window.

We also talked about going back to Koh Pha Ngan. The original Pha Ngan 5 were there, Yuhei, Kha Yen, MJ, Allison and I. If you haven't been, you should really go there for the full moon party.

We were always thought of at college as the "bad" group, always smoking, always noisy in class but then I thought we were pretty good, in fact, dare I say COOL good?

My 2 cents?

We've all grown up, but still the same nice, misunderstood by most except ourselves, people that we've always been. No doubt work has torn us apart but we still remain friends and you know making friends when you're already an adult just makes it different, I feel like my application forms for adult friends are running low and these people are in my "cool" list. I know it's so uncool to say "cool!" but as I said to Jenn who said it's uncool to not have a friendster account,

Organizational Chaos

What is important in running a pastry production kitchen effectively?

a) working tirelessly day and night to make sure everything is not only in good quantity but also of excellent quality.
b) managing manpower effectively so as not to tire out existing staff members
c) making above mentioned staff feel appreciated at the enormous load of work they need to deal with it daily.
d) giving support to your staff in the form of encouragement and backing them up when shit hits the fan because you KNOW they've poured all their energy to making beautiful desserts.

What creates respect for staff for their pastry chef?
1) Refined pastry skills in chocolate or sugar work
2) The ability to make staff feel appreciated, feel like family
3) Time management and people management skills

Now what happens if the above mentioned pastry chef fails in all three endeavors?


Pastry Kitchen Weekly Briefing

Scene 1

Chef : So, are you happy working here?
Commis 2 : Not really
Chef : Why?
Commis 2 : Because we have so much work to do and not one chef is helping us out, and when something goes wrong, we get all the shit.
Chef : Well if you can't take the work load, just quit, when can i get your letter?


Scene 2

Chef: I have never seen so many people taking medical leave in one year.
Commis 2 : We are all tired chef, some of us work 20 hours a day. so we get sick lo..
Chef: You'll NEVER see me taking a medical leave.

And lo and behold, two days later, our chef was down with food poisoning.... had to take MC..

We call it KETULAHAN...


Scene 3

Staff on MC and called in sick because of high fever

Chef (in an SMS): MC? What sick? and for how long? Or do you just want to spend time with your boyfriend?

And so, people quit en masse... our pastry kitchen was once 22 people strong, and within a span of 6 months we've dwindled down to 9 fulltime staff and 4 part timers..

So we pull together, work hard, cover our own assess because goodness knows they won't come through for us.

We've got great cooperation, great teamwork, too bad it's all done against them, if only they knew how much easier it could've been to win us over instead of being all Nazi on us.

We're not cows to be traded like livestock...

We're skilled professionals

We're not uneducated impressionable children...

We're smart cookies

We're not robots, even robots need to get recharged when batteries are low...

We're people with emotions and feelings

Happy Noo Yeah!


Hips gyrating, bodies glistening from the sweat, dancefloor packed, podium swinging.. that was how my new year eve countdown was like. Had a brief stopover with some friends at the Malaysian Ravers Association private party then on to Orange Club for the Prince Fest Playground party.

You could feel the good vibes upon entering the club, you could smell the anticipation of the boys for the coming new year.



Sister was bedecked in sequins, thigh high leather boots and toy police gun set... she looked more fabulous than the drag queens who were desperately trying to look like real women. ~chuckles~

There we were, superman, s&m girl deputy sheriff, Light Saber star wars boy and me, in my laser pointer ray gun and my tee that said "I come in 15 new and exciting positions"

So, new years resolution this year?



1) To be more magnanimous and not abuse people's trust

3) To travel more and widen my view on life
4) To kickstart my independent career as a maker of beautiful cakes
5) To be more of a friend, brother and lover.
6) To eat more fruit
7) To get my life in order.

Lets make this year a fantastic one shall we people?

Christmas Daze

Nah, it wasn't all that dramatic, it went well to say the least. Y'all must be thinking, what the hell is this boy talking about....

okay rewind to conversation with Sister #2 24th December 2006 abt 3:40pm.

Joyce: So have you planned anything for tonight?
Me: ME? plan? You're the one who dragged dad all the way from KK to spend Christmas with us, so YOU were supposed to come up with the plan.
Joyce: OK I'll call around, maybe we can have our Christmas Eve dinner at Traders Hotel or Prince Hotel.
Me: You do that..

and so, 30 minutes later...
Me: So what's the plan?
Joyce: Everything's booked out..
Me: Duh... of course it is it's Christmas Eve... hmmm okay well i've got a plan, why don't you bring Dad and Elyssa to my place and have Christmas Eve dinner with my gay house mates and my gay friends?
Joyce: That could be okay... *nervous laughter*
Me: it's set then, come over later, we're cooking dinner for some people anyways.



OKAY guys, we gotta do something about the "PORN" in the living room.

it eventually wasn't all that bad, Dad came over, everyone was well behaved i.e no drugs lying about on the table, no sex talk at dinner and everyone had a good time just eating a good homecooked meal with fruity sweet South African Sparkling Wine and fruitcakes heavily doused with alcohol. Although there was a bit of a kerfuffle at the beginning when Dad asked Matt if he always celebrates Christmas and Matt nonchallantly added, I'm an Athiest actually. I was pissing myself laughing in the kitchen. Thank goodness dad's coolness reigned.


Dinner was good too. Colin's beef goulash was a hit. Then there was the buttered rice, coleslaw, roasted peri-peri chicken, enriched cream of chicken soup, not to mention the Christmas goodies like cookies, snow capped macadamia brownies, rich moist caramel fruitcake, stollen and pannetone.




So we all had ourselves a Merry Little Christmas Eve... what more could a gay boy ask for? Family, good friends, great food, a visit from the dear ol' friend and fantastic presents. Not to mention going out clubbing just as soon as the last guest left the house.

All in all a Merry Christmas.

The company is excellent. A once-in-a-lifetime "hello which transformed into nights of contented cuddling, sugary bubblegum kissess and warm soul-embracing hugs which reached into the heavy lonely depths of your core.


The dreamy-verse is filled with colour. Colours, colours, colours and clapping-produced rainbows. Disco balls of every size brounced off prismic hues in the dark room making it shine brightly and as if the music knew exactly how the rainbows felt, it began its crescendo of uplifting strains to the heavy base thumpa-thump that keeps you grounded whilst you reached a high so smooth, so long, so whooooshing that you could reach up and kiss the stars.


After this, after Babylon, the City of Excess, the Garden of Earthly Delights, After buying rainbow coloured Elephants in a parade. After all this, I have happiest memories, light filled lucid dreams and i have the music buzzing in my head. But I miss my boy. The minute I stepped into wakefulness, in the taxi that brought me back to my plane, I missed him terribly. And I want to be with him again. To smile with him, to danceDANCEdance, to sleep in each others arms in bliss. Just to Be.

Chocolate moments..

Dark chocolate, thick lucious oozing velvety massess of dark chocolate. Dreams are made of these. At least my dreams for the past few days.

I've been dreaming about a rich rum soaked raisin chocolate cake, covered with photo-finish shiny to the hilt dark chocolate glaze.

I've been dreaming about layers of praline-filled puff pastry encasing smooth whipped cream and devestatingly rich dark chocolate ganache.

I've been dreaming about light airy cloudlike swirls of dark chocolate mousse with khalua infused whipped cream.

I need a chocolate fix.

People dream in colour but my dreams were almost sepia with just muted creams and browns strongly contrasting the deep dark chocolate of cocoa.

The plan is..

True Friends, good food and fashion.

Necessity is the mother of Invention. But when it becomes incestuous and they both mate then comes a grand idea.

It's hard to find good food which is affordable and delicious. It's almost impossible to find a restaurant that makes us comfortable like our own home. It's like squeezing blood from a stone to get people to dress up these days for dinner parties. It's vistually impossible for good friends and new friends to gather together for something as simple as dinner.

What if, a group of friends, whom are passionate about food and some have food as their lifeblood and careers, what if they come together and have a Easter gathering. They could start at the furthest point for pre-dinner drinks and hors douvres, then move onto the next house for main courses and then to a resort-style condo for dessert and finally cap off the night with after dinner drinks at a friend's new place in the heart of the city.

So the plan is just that.

Four weeks from now, on the second weekend of Easter, hopefully this too will come to pass.

Easter marks a new beginning, rebirth, new life. Something for the inner gourmet to look forward to and hope for the fashion dis-inclined to be bedecked in the latest spring fashions. Spring, Easter, pastel colours never looked so fresh. And who knows, for those with the yesteryear memories or borrow notions of Easter Egg hunts, it might just be your night.

Happy Easter to all bunnies and chicks everywhere.

What else can a pastry cook say?

Here's a good one. The recipe is always in my head. I like making one big cake. Don't worry it will sink in the middle because there's no flour in the recipe but that just means that the cavity can be filled with cream whipped with icing sugar and vanilla beans. It's delicious in it's dark silkiness. Best eaten with yoghurt ice cream and caramel sauce.


Soft Chocolate Cake

450g Cream
580g Dark Chocolate (Preferrably 66% cocoa mass)

9nos. Egg Yolk
6tsp Cornflour

9nos Egg WHite
150g Honey

Bring the Cream to the boil and pour onto dark chocolate stirring til it's all smooth

In another bowl, whisk together the egg yolks and cornflour till it's smooth. Combine the two mixtures

In a clean dry mixing bowl, whisk the egg whites together with the honey until soft peaks form. Fold this meringue into the Chocolatey Yolk mixture

Pour into a buttered and floured tin and bake at 170C for 15 - 20 minutes.

Dreams desserts and vanilin dung

Recently a plethora of friends' dreams have been coming true or about to come true. A good friend finally got her job overseas albeit the work visa problems, another friend is finally getting work and striving toward working for her uncle in London. One more good friend might have his dream restaurant up and running sooner than you can say "Have you got a liquor licence?"" This puts me into thinking what are my dreams? Where has my work led me? I've got a good job which although doesn't pay vast amounts of cash it does however expose me to a whole range of things, products and concoctions about pastry that I could only dream of if I were to work somewhere else locally. I'd love to own my own place. Great food and great service. Non-pretentious and secluded.

It would be fantastic and challenging to come up with the food, simple bistro fare and fantastic desserts. Summer berry terrines and chocolate caramel ice creams. Jade coloured pistachio and jet black sesame seed macaroons. Savoury bread and butter pudding with chunks of brioche, melted cheese and bacon. Pumpkin seed bread and milky butter loaves.

What with all the advances of food technology today we could create a whole new menu which challenges the boundaries of cuisine. Dessert first, main's last? Who knows? Even the Japanese scientists have come up with a method to extact vanillin (vanilla extract) from cow dung. They assure us it would be used for soaps and shapooos only because it wouldn't be profitably acceptable or socially feasible to have it in food. But it's okay to put it on our bodies and in our hair? Maybe room fresheners? Make your room smelling of the sweet vanilla of cow dung extract! What's next? Beer distilled from Kobe beef cows since they're drinking it already.

This isn't going anywhere... my dreams are on "slow" at the moment til I sort out my current life situation. Til then I'll keep on making beautiful and delicious desserts along with ice cream which you can slice with a paring knife easily because nothing less of perfection is expected in the Lost Horizon.....

A note on good food.

You know when friends ask you to go out to someplace new to eat, you're just a little bit apprehensive. But when your chef friends (and by Chef I mean people who work in the kitchens) say let's go eat, I'll bring you to someplace nice. You better bring your stretchable pants.

Pizza Uno is a non prentious little bistro. Not trying to be uppity and service was prompt and friendly. They have those lil italian soft drinks which is so hard to find here. Limonata, Aranchiata and Chinotto.

We had the marinated mushrooms which was really to die for,served with chewy bread to soak up the garlic and chilli infused oil. It was fantastic to start with. The Calamares Fritos was also good. The calamari was tender on the inside and crunchy on the outside. We also had a go with the Aglio Olio with grilled prawns. That was fantastic. and at RM23.00 per plate it was worth it. The pasta was aldente *thank goodness SOMEone can do it right* and the prawns were aromatic and succulent. The garlic slices, which I'm usually not a big fan of, were positively melting on the tongue and the chilli flakes packed a nice punch. We ordered the Pollo Romeo Pizza which had chicken, black olives, cherry tomatoes and pineapple. That was alright and then there was the Seafood Paella which although was good really tested the strength of our waistbands.

Of course talk centered on food. What else would chefs talk about? The best place for sunday brunch which features eggs, ham, sauteed mushrooms, grilled tomatoes, brioche, coffee and orange juice (it's a toss up between La Bodega and Bakerzin both in Bangsar) and the best gelato available here. (Hands down it goes to Lecka Lecka). The best cakes in town (We still believe they're the best at Shangri-la) and the best Sweedish Meatballs (not at Ikea but at Puzzini Pizza in Uptown)

We talked about how we made our herb infused oils and chili flakes made with chili padi from Sabah. We pondered on triple layered moarsmallows, using the gorgeous jade coloured pistachios to grind up and make macaroons. We want to sandwich hazelnut ganache between nougat discs and dip themin dark chocolate and we talked about how to make the best creme brulee. Soft and meltingly tender inside and covered with a golden burnished crust of demerara sugar on top. It's like cracking your way into heaven in a ramekin.

All the talk made us all the more hungry and all the more eager to go out and do dinner again.
